    Preheat oven to 425°F. Wash and dry all produce. Using the tip of a spoon, remove and discard black gills from undersides of portobello mushrooms . Quarter tomato lengthwise. Finely chop parsley .

    Lightly oil a baking sheet and arrange maple pork breakfast sausage on one side. Roast on the top rack ⏱️ 5 minutes .

    Drizzle mushrooms with cooking oil and rub to coat. Season with half the fry seasoning , salt, and pepper. Drizzle tomatoes with remaining oil and season with salt and pepper. After 5 minutes, arrange tomatoes and mushrooms stem-side down on the empty side of the sheet. Roast until vegetables are tender and sausages are cooked through ⏱️ 14 minutes .

    Heat butter in a small pot over medium-high heat until melted. Add remaining fry seasoning and cook, stirring, until fragrant ⏱️ 30 seconds . Stir in tomato paste and cook until thickened and darkened ⏱️ 2 minutes . Add cannellini beans with their liquid, chicken stock concentrate , and sugar . Cook, stirring, until liquid thickens and beans are saucy ⏱️ 2 minutes . Season generously with salt and pepper. Remove from heat and cover.

    Toast sourdough bread and spread evenly with garlic herb butter . Halve diagonally.

    Heat a drizzle of oil in a large pan over medium-high heat. Crack eggs into the pan and cover. Fry to your preference. Season with salt and pepper.

    Reheat bean mixture over medium heat if needed. Divide sausages, eggs, mushrooms, tomatoes, beans, and garlic toasts between plates. Garnish with parsley and serve immediately.
